Yes, you can copy the entire views directory somewhere else on your server (as long as the webserver has access). Then, provide the full path to that directory to the wallets_views_dir filter. Please see the documentation under “Frontend” -> “Alternative knockout templates” to see a full example of how to hook to the filter. Alternatively, you can use the views_dir shortcode attribute. This is also explained in the manual.
